Bagel Breakfast Casserole
1 Tbsp. Olive Oil
8 Oz. Breakfast Sausage
2 Cups Milk
3/4 Cups Half and Half
Pinch of Cayenne
8 Large Eggs
Kosher Salt
Freshly Ground Black Pepper
1 1/2 Cups Baby Spinach
2 Large Plain Bagels, cut into 1-inch pieces
1 1/3 Cups Provolone, grated
8 Oz. Cream Cheese, cut into 1-inch cubes
Everything but the bagel seasoning
Preheat your oven to 350 degrees. Grease a baking dish with butter or cooking spray.
In a skillet using medium high heat, add in the olive oil, and breakfast sausage, break the sausage with a wooden spoon and cook for 5-8 minutes. Remove the sausage using a slotted spoon.
In a large bowl whisk together the milk, half and half, cayenne pepper, eggs, 3/4 tsp. salt, 1/2 tsp. pepper until well combined. Add in the sausage, spinach, bagels, 3/4 of the provolone cheese. Mix until evenly coated.
Pour into prepared baking dish, dot the top of the casserole with cream cheese, remaining provolone cheese, and a good sprinkle of everything but the bagel seasoning (about 1-2 tablespoons).
Cover with foil and bake for 45 minutes. Uncover and bake for an additional 15-25 minutes or until the casserole is golden brown at the edges and set in the center.
Remove from the oven and allow to cool for 15-20 minutes before serving.
