Coconut Curry Wonton Soup

 This meal comes together in 30 minutes. Super easy and very flavorful.

Let's get started.

Coconut Curry Wonton Soup
2 Cups Coconut Milk
2 Cup Chicken Broth 
2 Bok Choy, cut into 1 inch pieces
4 Tbsp. Thai Red Curry Pate
4 Tbsp. Soy Sauce
1/2 Onion, thinly sliced
1 Cup Shredded Carrots
1 Tbsp. Grated Garlic
1 Tbsp. Grated Ginger
1 Tbsp. Coconut oil
Bibigo Mini Wontons

Toppings
Green Onion, thinly sliced
Cilantro, chopped
Lime
Chili Oil

In a pot add in the coconut oil, onion, garlic, ginger, and sauté for 1-2 minutes. Add in the curry paste, bok choy, carrots, and stir for another minute.

Pour in the coconut milk, chicken broth, and bring up to a simmer. Add in the whole bag of mini wontons and cook for an additional 8-10 minutes.

Serve and top with green onion, cilantro, chili oil, and lime juice.



Note: you can also add mushrooms or ramen noodles to this soup.
