This soup comes together in an hour. It's easy, delicious, and budget friendly.

Lentil Soup
3 Cups Lentils
1 Lb. Mild Sausage
1 Onion, finely chopped
1 Bell Pepper, finely chopped
2 Stalks Celery, finely chopped
3-4 Cloves Garlic, minced
1 12 Oz. Can Fire Roasted Tomatoes
2 Tbsp. Tomato Paste
3 Tbsp. Chicken Bouillon Powder
1 Tsp. Red Pepper Flakes
8 Cups Water
Kosher Salt
Freshly Ground Black Pepper
In a pot add in your sausage and allow to crisp up for 4-6 minutes.
In the same pot, add in the onion, pepper, celery, a pinch of salt, freshly ground black pepper, and sauté for a few minutes until the vegetables start to soften.
Then add in the garlic, tomato paste, red pepper flakes, and cook for an additional minute.
Add in the lentils, fire roasted tomatoes, water, chicken bouillon, and bring up to a boil. Then reduce to a simmer and allow to cook for 30- 40 minutes. Or until the lentils are tender.
Taste and adjust seasoning if you need to.
