Sweet Potato Salad

This is a great salad for a Friendsgiving. Double it and take it to a gathering with the dressing on the side.

Let's get started.

Sweet Potato Salad
2 Sweet Potatoes, peeled and diced
2 Tbsp. Olive Oil
Kosher Salt
Freshly Ground Black Pepper
Arugula and Mixed Greens 
1/2 Cup Candy Walnuts
6 Oz. Goat Cheese, crumbled 
1/2 Cup Pomegranate Seeds

Dressing
1 Tbsp. Honey
1 Lemon, zested and juiced
2 Tbsp. Olive Oil
1 Tsp. Dijon Mustard
Kosher Salt
Freshly Ground Black Pepper

Pre-heat your oven to 350 degrees Fahrenheit. 

Place sweet potatoes on a baking sheet, drizzle with olive oil, season with salt, pepper, and toss until coated. 

Bake for 45-50 minutes or until the sweet potatoes have softened. Remove from the oven and allow to cool completely. 

In a small bowl add in the honey, lemon zest, lemon juice, Dijon mustard, olive oil, a pinch of salt, pepper, and whisk until well combined. Taste and adjust seasoning if needed. Set aside.

On a serving platter add in the arugula and mixed greens, top with sweet potatoes, goat cheese, pecans, pomegranate seeds, and drizzle with dressing. Serve and enjoy.
