Jalapeno Creamed Corn

This is an easy side dish if you need something to bring to a gathering and you want a low maintenance dish. You can also only use one jalapeno or leave it out if you don't like spicy foods.

Let's get started. 

Jalapeno Creamed Corn
4 Cans of Whole Sweet Corn, drained.
1 Stick (1/2 Cup) Unsalted Butter
8 Oz. Cream Cheese, cubed
3-4 Jalapenos, Seeded and diced
1/3 Cup Parmesan Cheese
1/2 Cup Heavy Cream
Salt 
Freshly Ground Black Pepper
1/4 Tsp. Garlic Powder
1/4 Tsp. Onion Powder
Chives, chopped for garnish

In a medium pot, add in the butter and melt. Add in the jalapenos and sauté for a minute or two.

Add in the corn, a pinch of salt, freshly ground black pepper, garlic powder, onion powder, and sauté for 3-5 minutes constantly stirring.

Add in the cream cheese, heavy cream, and stir until fully melted. Add in the Parmesan cheese and stir to combine. Taste and adjust seasoning to your liking.

Serve and enjoy!

Side note: you can use fresh, frozen, or canned corn. Just make sure you have 4 Cups total.
