Salt and Pepper Chicken Wings

Salt and Pepper Chicken Wings 
3 Lbs. Chicken Wings
1 Tsp. Baking Powder
1 Tsp. Chicken Bouillon
1/2 Tsp. Ground White Pepper
1 Tsp. Onion Powder
1 Tsp. Garlic Powder
1 Tsp. Kosher Salt
2 Tbsp. Shaoxing Cooking Wine
1 Tbsp. Vegetable Oil
1/2 Cup Water
1 Cup All Purpose Flour
1/2 Cup Cornstarch
Vegetable Oil for frying

Salt & Pepper Seasoning
2 Tsp. Kosher Salt
1 Tsp. Black Pepper
1 Tbsp. Sugar
2 Jalapenos, Sliced
4 Green Onions, cut into 1 inch pieces (white onion works too)
4 Cloves Garlic, minced 

In a bowl add in the chicken wings, baking powder, chicken bouillon, white pepper, onion powder, garlic powder, salt, Shaoxing wine, 1 tbsp. vegetable oil, water, flour, cornstarch, mix until well combined. Allow to sit for 10-15 minutes.

Meanwhile, in a pot add in enough oil to come up two inches up the pot. Bring the oil temperature up to 350 degrees Fahrenheit.

Fry wings in batches for 12-15 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Remove from oil and allow to drain on a wire rack. Fry remaining wings in batches until done.

In a small bowl combine the salt, black pepper, sugar, and mixed until well combined.

In a separate large pan, add in 2 tbsp. oil and jalapenos; allow to cook for 1 minute. Then add in the garlic, green onions, wings, seasoning mix. Toss and cook for an additional minute or two. 

Remove from pan and serve.
