Beef Mami

Beef Mami is an incredible Filipino noodle soup that is honestly all about the broth. It's a little time consuming but honestly it is so worth it. Make a batch and enjoy.

Beef Mami
1.5 Lbs. Brisket, cut into 1 inch chunks
1 Onion, Chopped
3 Inch Piece of Ginger Sliced
6 Cloves Garlic, Smashed
1/2 Cup Soy Sauce
3 Tbsp. Dark Soy Sauce
1/4 Cup Brown Sugar
12 Cups Water
1.5 Lbs. Short Rib Bones
3 Tbsp. Kosher Salt
1 Tbsp. Fish Sauce
4 Star Anise
Freshly Ground Black Pepper
Fresh Ramen

Toppings
Bok Choy, Blanched
Bean Sprouts
Green Onion
Garlic Chili Oil
Jammy Eggs 


Put your short ribs and salt into a pot and cover with water. Bring up to a boil and allow to boil for 5 minutes. Drain and rinse the short ribs. This method allows us to remove any impurities. 

Return the short ribs to the pot, along with the brisket, onion, ginger, garlic, salt and water. Bring up to a boil then reduce to a simmer. Allow to simmer for 60-120 minutes. Or until the beef is tender. 

Once the beef is tender remove the beef from the broth and strain your broth using a fine mesh strainer. Discard the onion, garlic, ginger. 

Return your broth into the pot. Add in the soy sauce, dark soy sauce, brown sugar, star anise, fish sauce, vinegar and simmer for 30 minutes.

Meanwhile sear your beef in a pan with 1 tbsp. dark soy sauce, 1 ladle of broth, and freshly ground black pepper. Remove from heat and set aside.

Cook your ramen according to package directions, drain, and set aside. Also blanch your bok choy and set aside. 

Once the broth has cooked for the additional 30 minutes. Turn off the heat and assemble your bowls.

In a bowl add in some ramen noodles, bok choy, bean sprout, beef, a ladle of broth. Top with green onions, jammy eggs, garlic chili oil. 

Serve and enjoy.




Note: to make jammy eggs or soft boiled eggs. Place eggs into a pot of boiling water. Allow to cook for 7 minutes then remove and place in an ice bath for 1 minute. Remove and gently remove the shell.
