Apple Cider Donuts

Went a little crazy and bought two gallons of apple cider. Made a batch of these donuts and they were gone so quickly that I had to make a second batch.

Let's get started.

Apple Cider Donuts
1 1/2 Cups Apple Cider
2 Cups All Purpose Flour
1 Tsp. Baking Soda
1 Tsp. Baking Powder
1 Tsp. Cinnamon
1 Tsp. Apple Pie Spice
1/2 Tsp. Kosher Salt
2 Tbsp. Melted Butter
1 Egg
1/2 Cup Brown Sugar
1/2 Cup Granulated Sugar
1/2 Cup Buttermilk
1 Tsp. Vanilla Extract

Topping
1 Cup Granulated Sugar
1 Tsp. Cinnamon
2 Tsp. Apple Pie Spice
6 Tbsp. Melted Butter

Preheat your oven to 350 degree Fahrenheit. Grease a donut pan with nonstick spray.

In a small sauce pan over low heat add in the apple cider and allow to reduce for 10-15 minutes or until there is only 1/2 Cup of cider left. Remove from the heat and allow to cool completely. 

In a large bowl, combine the flour, baking powder, baking soda, salt, apple pie spice, and cinnamon. 

In a separate bowl, granulated sugar, brown sugar, egg, butter, buttermilk, vanilla extract, and mix until smooth.

Add wet ingredient into the dry ingredients along with apple cider and mix until combined.

Spoon batter into the prepared donut pans, fill 3/4ths of the way up. Don't fill to the top as they will rise.

Bake for 12-15 minutes or until a toothpick inserted into a donut comes out clean.

Remove from oven and allow to cool slightly.

In a bowl combine the granulated sugar, apple pie spice, and cinnamon; mix until combined. Dunk each donut in the melted butter then toss in the apple spice cinnamon sugar.

Serve and enjoy.
