Spicy Coconut Grilled Chicken Skewers

Curry in skewer form, to enjoy the last bit of summer. It is way too hot to cook indoors so I will be letting the grill do all the work.

Making these are a little messy but they are so worth it. Especially when you are craving curry but can't stand to be near a hot stove for more than a few minutes at a time. 

Just place these on the grill and walk away for 6 minutes, come back turn them and walk away for an additional 6 minutes. 

Let's get started. 

Spicy Coconut Grilled Chicken Skewers
1 3" piece Ginger, grated
5-6 Cloves of Garlic, grated
3/4 Cup Coconut Milk
1/4 Cup Sambal Oelek
1/4 Cup Fresh Lime Juice
1 Tbsp. Red Curry Paste 
2 Tbsp. Brown Sugar
1 Tbsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
2 Tbsp. Vegetable Oil
2 Lbs. Skinless Boneless Chicken Thighs, cut into 1 inch pieces

Serve with:
White Rice
Lime Wedges
Top with Cilantro 

In a large bowl add in the ginger, garlic, coconut milk, sambal oelek, lime juice, red curry paste, brown sugar, salt, pepper, oil, and mix until well combined. Toss in the chicken to coat. 

Preheat a grill or grill pan. 

Add the chicken onto skewers and grill your chicken skewers for 6-7 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.

Remove from grill, serve alongside some rice pilaf, top with cilantro and lime wedges and enjoy.
