This is super simple to make, great for a potluck if you're going to one this labor day weekend.
Let's get started.
Grinder Pasta Salad
1 lb. Rotini (any short pasta works)
1/2 Cup Mayo
2 Tbsp. Red Wine Vinegar
1 Tbsp. Dijon Mustard
1-2 Cloves of Garlic, grated
1 Tsp. Oregano
1/4 Cup Parmesan Cheese, grated
1/2 Tsp. Red Pepper Flakes
Kosher Salt
Freshly Ground Black Pepper
6 Pieces Salami, sliced
6 Pieces Ham, sliced
6 Pieces Pepperoni, sliced
6 Pieces Provolone, sliced
1 English cucumber, chopped
1 Pint Cherry Tomatoes, halved
1/4 Red Onion, sliced
1/4 Cup Pepperoncini, sliced
Cook pasta according to package directions. Drain and allow to cool.
In a bowl add in the mayo, red wine vinegar, Dijon mustard, garlic, oregano, Parmesan cheese, a pinch of salt, freshly ground black pepper, red pepper flakes, and stir until well combined.
Add in the shredded lettuce, onion, pepperoncini, and stir until well combined. Taste and adjust seasoning to your liking.
Add pasta, salami, ham, pepperoni, provolone, tomatoes, onion, cucumber, and pepperoncini. Toss until well combined.
Serve and enjoy.
