Chipotle Chicken Quesadillas

This is a great way to upgrade rotisserie chicken. So easy and perfect for a weeknight dinner. 

Let's get started.

Chipotle Chicken Quesadillas
1 Rotisserie Chicken Shredded
1 Can Chipotles in Adobo Sauce
1 Can Fire Roasted Tomatoes
2-3 Cloves Garlic
1 Onion
1 Bunch Cilantro
2 Tsp. Oregano
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
1 Tbsp. Vegetable Oil
16 oz. Monterey Jack Cheese, shredded
Flour Tortillas

In a blender add in the chipotle peppers, fire roasted tomatoes, garlic, cilantro, salt, pepper, half of the onion, blend until well combined.

In a skillet add in the oil. Slice the other half of the onion and add it into the prepared skillet. Add in the shredded chicken and the chipotle sauce and simmer. Taste and add salt if needed. Remove from heat.

In a separate pan add in a tortilla toast first side for 10 - 15 minutes. Then turn and add the cheese, chicken, and an additional layer of cheese close in half. 

Allow to toast until cheese is melted. Repeat making as many quesadillas as you want. 

Serve and enjoy.
