Easy dinner done in under an hour. Serve along a side of white rice or roasted broccoli and enjoy.

Creamy Dill Salmon
4 Salmon filets
2 Cups Spinach
1 Bunch Dill, Chopped
1 Cup Coconut Cream
2 Tbsp. Dijon Mustard
2-3 Garlic Cloves, minced
1 1/2 Tsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
2 Tsp. Paprika
2 Tbsp. Butter
1 Tbsp. Olive Oil
Pat the salmon dry, season on both sides with salt, pepper, and paprika.
Heat a skillet and add olive oil. Sear fillets flesh side down for 8 minutes. Remove from pan and set aside.
In the same skillet add the butter, spinach, and garlic, stir for one minute. Add the coconut cream, Dijon mustard, dill, a pinch of salt and pepper. Bring up to a simmer.
Add the salmon back in and allow to cook for an additional 5 minutes.
Serve and enjoy.
