Make this on a grill or grill pan and enjoy with a simple side salad.

Grilled Basil Chicken
4 Chicken Breast
1 Cup Fresh Basil
1 Tsp. Italian Seasoning
2-4 Cloves Garlic
1 Shallot
2 Lemons, zested and juiced
1/4 Cup Olive Oil
1 Tbsp. Kosher Salt
2 Tsp. Freshly Ground Black Pepper
1 Tsp. Red Pepper Flakes
In a blender add in the basil, Italian seasoning, garlic, shallot, lemon zest, lemon juice, olive oil, salt, pepper, red pepper flakes, and blend until smooth.
Cut the chicken breast in half horizontally and pound slightly. Place chicken into a gallon size zip lock bag and pour the marinade over top. Seal and toss until combined. Allow chicken to marinate in the refrigerator for a minimum of four hours, overnight works best.
Pre-heat your grill or grill pan.
Grill chicken for 3-4 minutes on each side or until internal temperature reaches 165 degrees.
Remove from the grill, serve and enjoy.
