Citrus season is in, and this recipe is a great way to use up some of them. Super tasty, easy, and if you marinate the night before comes together in a breeze.
Let's get started.
Citrus Chicken Skewers
1 Orange, zested and juiced
1 Lemon, zested and juiced
1 Lime, zested and juiced
1 Tsp. Freshly Ground Black Pepper
1 Tsp. Kosher Salt
1/4 Cup Soy Sauce
1/4 Cup Vegetable Oil
1 Tbsp. Dried Tarragon
4-6 Cloves of Garlic, minced
3 lbs. Boneless Skinless Chicken Thighs, cut into 1 inch pieces
1 Onion, cut into 1 inch pieces
2 Bell Peppers, cut into 1 inch pieces
wooden or metal skewers
In a Ziplock bag add in the orange zest, orange juice, lemon zest, lemon juice, lime zest, lime juice, garlic, salt, pepper, tarragon, soy sauce, vegetable oil, and chicken pieces. Toss until well combined.
Allow chicken to marinade for a minimum of 4 hours or overnight.
Skewer the chicken, onion, pepper onto the skewers. Alternating pieces until you finish. Discard the marinade.
Pre-heat your grill or grill pan to medium high heat.
Grill your chicken skewers for 6-7 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.
Remove from grill, serve alongside some rice pilaf, or a simple side salad, and enjoy.
