This is a great dinner to make during Lent if you happen to participate. If you don't make this anyways because it is delicious.
Let's get started.
Shrimp Salad Cups
1 lb. Shrimp, peeled and deveined
1 lb. Imitation Crab
Kosher Salt
Freshly Ground Black Pepper
1 Lemon, peeled and juiced
1 Lime, juiced
1/2 Red Onion, finely diced
1/2 Cup Cilantro, finely chopped
2 Avocadoes, diced
2 Roma Tomatoes, finely diced
1/2 Cup Mayo
Butter or Romaine Lettuce
Hot Sauce of your choice
Boil the shrimp with the lemon peel and a pinch of salt until just cooked through. Drain and let cool completely.
Roughly chop the imitation crab.
In a bowl add in the shrimp, crab, onion, cilantro, avocado, mayo, lemon juice, lime juice, salt, and pepper. Stir until well combined. Taste and adjust seasoning if needed.
Place a spoonful of the shrimp mixture into your lettuce leaves top with hot sauce and enjoy.
*notes: you can also use tostadas or tortilla chips to eat this shrimp salad*
