This really didn't need it's own post. However I thought many people would benefit from the idea. So here it is lol.
Let's get started.
Turkey Quesadillas
2 Cups Leftover Turkey, chopped
1 Small Onion, Thinly Sliced
1 Red Bell Pepper, Sliced
2 Cups Monterrey Jack Cheese, shredded
2 Tbsp. Olive Oil
Kosher Salt
Freshly Ground Black Pepper
6 Flour Tortillas
Pico de Gallo for serving
Salsa for serving
Sour Cream for serving.
Add the olive oil into a skillet and using medium high heat. Sauté the onion and peppers for 2 minutes. Season with a pinch of salt and freshly ground black pepper. Add Turkey and heat until warmed through. Remove from heat and set aside until needed.
In a separate skillet, add in a tortilla heat on the first side for 30 seconds or so, flip and top with cheese, turkey mixture, and fold in half. Allow the tortilla to get golden brown on the first side then flip and allow to get golden brown on the second side.
Repeat with remaining tortillas.
Serve quesadillas alongside some pico de gallo, sour cream, and some salsa. Enjoy!
