Roasted Jalapeno Guacamole

So easy to make and super delicious. Use it as a dip with some tortilla chips or serve it as a topping for your next taco night. 

Let's get started. 

Roasted Jalapeno Guacamole
4-6 Avocados, roughly chopped
2 Jalapenos 
2 Spring Onions, thinly sliced
1 Shallot, finely minced
3 Cloves of Garlic
1/3 Cup Soy Sauce
1/3 Cup Lime Juice
1/2 Cup Cilantro, finely chopped
Freshly Ground Black Pepper
Kosher Salt

In a cast iron pan using medium high heat, add the jalapenos and garlic, roast until jalapenos are softened all around. Remove from heat and let cool. 

Once cooled, remove outer layer of the jalapeno and garlic and finely chop both. 

In a large bowl, add in the avocado, shallot, cilantro, jalapeno, garlic, lime juice, soy sauce, spring onions, and freshly ground black pepper. Mix until well combined. Taste and add more salt and pepper if needed.

Serve and enjoy.
