Marinated Grilled Veggies

I love this mixture of squash and eggplant. Make this and you won't regret it. So simple but very satisfying. You can use any veggies you have, this is just what I happened to have on hand.

Let's get started.

Marinated Grilled Veggies
1 Eggplant
2 Zucchinis 
2 Yellow Squash
2 Onions
3 Bell Peppers (red, orange, yellow)
1/4 Cup Olive Oil
1 Tbsp. Balsamic Vinegar 
1 Tbsp. Dijon Mustard
1 Tbsp. Rosemary, finely chopped
1 Lemon, zested and juiced
3-4 Cloves of Garlic, minced
1 Tsp. Kosher Salt
1/2 Tsp. Freshly Ground Black Pepper
1/2 Tsp. Red Pepper Flakes

Cut the eggplant, zucchinis, yellow squash into 1-inch slices. Slice the peppers around the core, you should have 4 slices of each pepper in total. Slice the onions into 1-inch slices.

In a bowl, add the olive oil, balsamic vinegar, Dijon mustard, rosemary, lemon zest, lemon juice, garlic, salt, pepper, and red pepper flakes. Whisk until well combined. 

Toss the eggplant, zucchinis, yellow squash, onion, and peppers into the marinade.

Pre-heat your grill.

Place the zucchinis, yellow squash, peppers, and onion slices onto prepared grill. Grill the veggies for 3-5 minutes on each side. Brush the veggies with remaining marinade for maximum flavor. 

Remove once veggies are done to your likeness. 

Serve and enjoy.
