Love this as an alternative to plain white rice.

Cilantro Lime Rice
2 Cups Long Grain Rice
1/2 Cup Cilantro
2 Limes, juiced
4 Cups Water
2 Tbsp. Chicken Bouillon Powder
1/2 Tsp. Garlic Powder
1/2 Tsp. Onion Powder
2 Tbsp. Vegetable Oil
In a blender add in the cilantro, lime juice, water, chicken bouillon, garlic powder, onion powder, and blend until combined. Set aside.
In a medium pot, add in the oil, and rice. Stir for 1-2 minutes or until the rice is slightly toasted.
Add in the cilantro mixture, stir, and cover. Allow to simmer for 15-18 minutes. Then turn off the heat and allow to sit for 5 minutes.
Fluff with a fork, serve, and enjoy.
