Cilantro Citrus Steak Kabobs

Inspiration for these came from me wanting to make asada tacos but had no tortillas and didn't want to go to the store to pick some up because #lazy also grocery prices are no joke, and we should all just use what we have to make a delicious dinner. Anyways make these for labor day and enjoy.

Let's get started.

Cilantro Citrus Steak Kabobs
2 lbs. Steak, (chuck cut into 1-inch pieces works great)
1 Orange, juiced
1 Lime, juiced
1 Lemon, juiced
4-6 Cloves of Garlic
1/3 Cup Cilantro
2 Tbsp. Paprika
1 Tbsp. Chili Powder
2 Tsp. Ground Cumin
1 Tbsp. Onion Powder
1 Tbsp. Kosher Salt
2 Tsp. Freshly Ground Black Pepper
2 Tbsp. Vegetable Oil
Skewers 
3 Bell Peppers, cut into 1-inch pieces
1 Large Red Onion, cut into 1-inch pieces

In a blender add in the oil, orange juice, lemon juice, lime juice, salt, pepper, garlic, cilantro, paprika, chili powder, cumin, onion powder, salt, pepper and blend until well combined.

In a bowl add the steak cubes and top with half of the marinade mixture. Mix until steak is evenly coated. Allow to sit at room temperature for 30 minutes. 

Thread your steak pieces, onion, bell pepper, alternating pieces on the skewers.  

Pre-heat your grill. Grill Skewers for 5-8 minutes. Flipping occasionally. Until cooked to your desired doneness.

Serve alongside some cilantro lime rice, remaining marinade, and enjoy.
