Make this along with some white rice and you have an easy dinner done in under an hour.

Sweet Chili Chicken
6 Chicken Thighs (bone in, skin on)
1/2 Cup Sweet Chili
2-3 Tbsp. Sambal
2 Limes, juiced
2-3 Garlic Cloves, minced
Kosher Salt
Freshly Ground Black Pepper
2 Red Bell Peppers, sliced
1 Red Onion, sliced
Cilantro, for garnish
Season the chicken with salt and pepper on both sides.
Pre-heat your oven to 350 degrees Fahrenheit. Line a half sheet pan with parchment paper. Lay your sliced onion and peppers down.
In a large bowl, add in the sweet chili sauce, sambal, lime juice, garlic, mix until well combined. Toss in your chicken and coat evenly.
Add chicken to your prepared sheet pan, and top with any remaining sauce.
Bake for 45-60 minutes, or until the chicken is fully cooked through. Remove from the oven.
Serve alongside some white rice and top with cilantro.
