Pork Souvlaki

Super simple dinner. Marinate these the night before and you'll have dinner done in an hour. You can make the zucchini or serve the souvlaki with a salad. Either way you can't go wrong.

Let's get started.

Pork Souvlaki
3 Lbs. Pork Tenderloin, cut into 1 inch pieces
1/4 Cup Dry White Wine
1 Lemon, juiced
1/4 Cup Extra Virgin Olive Oil
2 Tbsp. Dried Oregano
2 Tsp. Dried Basil
1 Tbsp. Paprika 
6 Cloves of Garlic, minced
1 Tbsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper

In a resealable bag, add in the pork cubes, wine, lemon juice, olive oil, oregano, basil, paprika, garlic, salt, and freshly ground black pepper. Toss until well combined. Marinate for a minimum of 30 minutes overnight works best.

Pre-heat your grill. 

Skewer your pork. Allow the skewers to rest on the counter top 30 minutes prior to grilling.

Grill for 5 minutes turn and grill for an additional 5 minutes. Or until fully cooked through.

Serve and enjoy.



Lemon Rice
1 1/2 Cups Long Grain White Rice
3 Cups Water
1 Tbsp. Chicken Bouillon Powder
1 Lemon, juiced
2 Tbsp. Olive Oil
2 Cloves Garlic, minced
1/2 Small Onion, diced 

Preheat a small pot. Add in the olive oil and onion, sauté for 1-2 minutes. 

Add in the rice, garlic, and allow to toast for an additional 2 minutes. Add in the water, lemon juice, and chicken bouillon. Stir until well combined.

Cook on medium low for 15-18 minutes or until the water has been fully evaporated.  

Turn off the heat and allow to sit undisturbed for 5 minutes then fluff with a fork.

Serve an enjoy.

Grilled Zucchini
6 medium Zucchinis
1/4 Cup Olive Oil
2 Tbsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
2 Tsp. Italian Seasoning
3 Lemons, Zested and Juiced

In a bowl add in 2 tbsp. of kosher salt and all of the zest of the lemons. Stir until well combined. Set aside.

Slice the zucchini in half lengthwise. Place them in a large resealable bag. 

Add in the olive oil, lemon juice, Italian seasoning, 1 tsp. of the prepared lemon salt and freshly ground black pepper. Seal the bag and toss until everything is fully coated. Set aside for 15-20 minutes.

Pre-heat your grill. 

Grill zucchini cut side down for 6 minutes. Flip over and continue to cook for an additional 6-7 minutes or until soft.

Remove from grill and sprinkle a little bit more of the lemon salt overtop. 

Serve and enjoy.
