No Bake Key Lime Cream Pie

I love me some no bake desserts. You can use a store-bought premade graham cracker crust in place of the pecan shortbread cookies.

Let's get started.

No Bake Key Lime Cream Pie
11.3 Oz. Pecan Shortbread Cookies, crushed
1/3 Cup Butter, melted
4 Cups Heavy Cream
1/4 Cups Powdered Sugar
1 Tsp. Coconut Extract
1 8 Oz. Pkg. Cream Cheese, softened
1 14 Oz. Can Sweetened Condensed Milk
1/2 Cup Key Lime Juice
1 Tbsp. Key Lime Zest
1/4 Cup Sweetened Shredded Coconut, toasted

Mix the crushed cookies and melted butter. Push into a pie pan and refrigerate until needed.

In a large bowl combine the cream cheese, lime juice, lime zest, coconut extract, sweetened condensed milk, and mix until well combined.

In a separate bowl, add the heavy cream and powdered sugar, mix until stiff peaks form. 

Fold in the whipped cream into the cream cheese mixture. Pour the mixture into the prepared pie pan. Top with the shredded coconut. Refrigerate for a minimum of 4 hours.
