Meatloaf
1 lb. Ground Beef
1 lb. Milk Italian Pork Sausage
1 Onion, diced
1 lb. Mushrooms, diced
1 Green Bell Pepper, diced
1 Red Bell Pepper, diced
4-6 Cloves of Garlic, minced
2 Eggs
1/2 Cup Panko Breadcrumbs
1/2 Cup Parmesan Cheese, grated
1 Tbsp. Italian Seasoning
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
Kosher Salt
Freshly Ground Black Pepper
Red Pepper Flakes
1 Tbsp. Olive Oil
1 Tbsp. Butter
3/4 Cup BBQ Sauce
In a large skillet using medium high heat, using no oil at all, add in the mushrooms and allow to sit for a minute. Stir until the mushrooms develop some color. About another minute or so.
Add in the oil, butter, onion, and peppers into the skillet. Season with a pinch of salt and pepper. Sauté for 5 minutes or until the onions and peppers have softened. Add in the minced garlic, 1 tsp. of Italian seasoning, and continue to cook for another 2 minutes. Remove from heat and allow to cool completely.
In a large bowl, add in the ground beef, Italian sausage, mushroom mixture, eggs, breadcrumbs, parmesan cheese, remaining Italian seasoning, garlic powder, onion powder, 2 Tsp. kosher salt, freshly ground black pepper. Mix until well combined.
Pre-heat your oven to 375 degrees Fahrenheit.
Using a roasting pan or baking pan. Form the meatloaf into the center of the pan.
Bake for 35 minutes then brush the outside with BBQ sauce and bake for an additional 25 minutes.
Remove from the oven and allow to rest for 10-15 minutes.
