This heat wave is no joke. I love food but even I think it is too hot to cook. I've been making easy antipasti for dinner a lot. It easy to put together and doesn't require any cooking.
Let's get started.
Bruschetta
16 Oz. Cherry Tomatoes, halved
1 Shallot, minced
2 Cloves of Garlic, Minced
1/3 Cup Parsley, finely chopped
10 Basil Leaves, finely chopped
2 Tbsp. Olive Oil
1 Tbsp. Balsamic Vinegar
Kosher Salt
Freshly Ground Black Pepper
Cottage Cheese
Baguette for serving, sliced and slightly toasted
In a bowl, combine the tomatoes, shallot, garlic, parsley, basil, olive oil, balsamic vinegar, a good pinch of salt, pepper, and mix until well combined.
In a serving bowl add the cottage cheese, top with tomato mixture, and serve along side some toasted or grilled baguette.
Serve and enjoy.
