Grilled Halloumi Salad

With grocery prices still rising. I am starting a series called 10 ingredients or less. Where I will take a handful of ingredients and make a simple and delicious dinner that will be able to feed 4 people comfortably. 

This is a simple but delicious salad. A perfect light lunch or dinner. 

Let's get started. 

Grilled Halloumi Salad
Halloumi, thinly sliced
1 Lemon, juiced
6 Cups Arugula
2 Mini Cucumbers, sliced
15 Cherry Tomatoes, halved
2 Cups Watermelon
1 Cup Blueberries
2 Tbsp Fresh Mint, chopped
Balsamic Glaze
Kosher Salt

Pre-heat your grill. Grill the Halloumi for 2 minutes on each side. 

In a bowl add in the arugula, cucumbers, tomatoes, watermelon, blueberries, mint, squeeze the lemon juice over top, and season with salt. Top with halloumi and drizzle with balsamic glaze.

Serve and enjoy.
