Esquite + Pasta Salad is such a good combo.
Let's get started.
Esquite Pasta Salad
1 Lb. Macaroni Noodles
4 Corns on the Cob
1/2 Cup Cotija Cheese
1/2 Cup Queso Fresco
1/2 Cup Red Onion, finely diced
2 Jalapenos, finely chopped
2 Cloves of Garlic, minced
1 Tsp. Chili Powder
1/4 Tsp. Kosher Salt
1/4 Tsp. Black Pepper
1/4 Tsp. Garlic Powder
1/8 Tsp. Cayenne Pepper
2 Tbsp. Butter
Dressing
1 Cup Mayo
1/2 Cup Sour Cream
1/4 Cup Lime Juice
2 Tsp. Lime Zest
1/4 Tsp. Kosher Salt
1/4 Tsp. Black Pepper
1 Tbsp. Trader Joe's Everything but the Elote Seasoning
Cook macaroni according to the package directions. Drain and set aside and allow to cool completely.
While the macaroni is cooking. In a skillet, add in the butter, onion, jalapeno, and sauté for 2 minutes. Add in the garlic, salt, pepper, chili powder, garlic powder, cayenne, freshly ground black pepper, and continue to cook for an additional 5-6 Remove from the heat and allow to cool completely.
Grill the corn on high on all sides, then remove kernels from the cob.
In a large bowl, combine the mayo, sour cream, lime juice, lime zest, salt, pepper, and Elote seasoning. Mix then stir in the macaroni, corn, onion mixture, queso fresco, and cotija.
Serve and enjoy.
