Miso Carrot Salad

 Another salad, what can I say... they are both nutritious and delicious.

Let's get started.

Miso Carrot Salad
6 Cups Mixed Greens
4 mini Cucumber, thinly sliced
1 Carrot, Julienned
1/2 Cup Cilantro, chopped
1/2 Small Red Onion, thinly sliced
Avocado, thinly sliced
2 Sirloin Steaks
Kosher Salt
Freshly Ground Black Pepper

Miso Dressing
1/2 Cup White Miso
1/4 Cup Avocado Oil
1/2 Cup Grated Carrots
2 Tbsp. Grated Ginger
2 Tbsp. Rice Vinegar
2 Tsp. Maple Syrup or Honey
1/4 Cup Water
1/2 Tsp. Kosher Salt
1/2 Tsp. Freshly Ground Black Pepper
3 Tbsp. Sesame Seeds

In a blender, add in all of the ingredients for the dressing except the sesame seeds, blend until smooth. Once smooth stir in the sesame seeds and set aside.

Season your steak with salt and pepper on both sides. Pre-heat a grill pan and grill for 4 minutes on each side. Remove from grill pan and allow to rest for 5 minutes. 

In a large salad bowl, combine your mixed greens, cucumber, carrot, cilantro, red onion, and toss until well combined.

Serve your salad, slice your steaks and add on top of your salad, top with sliced avocado, and miso dressing.
