Loaded Veggie Sandwich

This is both healthy and delicious. Perfect if you're planning to go on a picnic this Memorial Day weekend.

Let's get started. 

Loaded Veggie Sandwich 
Toasted Sourdough
Jalapeno Hummus (or your favorite)
Persian Cucumber, thinly sliced
Avocado, Sliced
Tomato, thinly sliced
Red Onion, thinly sliced
Lettuce
Spinach
Pesto 

*You can shredded chicken for additional protein. You can add cheese. 

Layer your sandwich by smearing some hummus on one half of the sandwich, top with cucumber, avocado cucumber, tomato, red onion, lettuce, spinach and a smear of pesto on the other half of your sandwich. 

Serve alongside your favorite drink and chips.
