Grilled Lamb Chops

This would be great for a Mother's Day dinner. 

Let's get started.

Grilled Lamb Chops
3 lbs. Lamb Chops
2 Tsp. Kosher Salt
1 Tbsp. Ground Cumin
1 Tbsp. Ground Coriander
1 Tsp. Ground Cardamom
1 Tsp. Freshly Ground Black Pepper
Red Pepper Flakes
2-3 Tbsp. Olive Oil
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder

In a small bowl combine the salt, cumin, coriander, cardamom, garlic powder, onion powder, red pepper flakes, and freshly ground black pepper. Mix to combine. 

Rub lamb with olive oil, and season with spice mix. Cover with plastic wrap and refrigerate for a minimum of 4 hours. Overnight is best.

Remove from the refrigerator half an hour prior to grilling.

Pre-heat your grill or grill pan, add a little bit of oil. Add in the lamb chops, grill on each side for 3-4 minutes.

Remove from the grill and allow to rest for 5-7 minutes. 

Serve and enjoy.
