This is a great pasta salad. Perfect for a light lunch and a great way to use up leftover chicken.
Let's get started.
Herby Pasta Salad
1 lb. Fusilli Pasta, cooked, drained and cooled
1/2 Roast Chicken Shredded
10-12 Cherry Tomatoes, halved
2 Avocados, cubed
Herb Sauce
1 Bunch Dill
1 Bunch Parsley
1 Bunch Chives
2-3 Garlic Cloves
1/2 Heavy Cream
8 oz. Cream Cheese, softened
1 Tsp. Kosher Salt
1/2 Tsp. Freshly Ground Black Pepper
Combine all of the herb sauce ingredients into a food processor. Pulse until well combined.
In a bowl, combine the cooked pasta, shredded chicken, tomatoes, and avocado. Toss to coat.
Serve and enjoy.
