The last of us is sadly coming to a close. 😠It had some ups and many, many downs. I had no idea what this show was going to be about as I have never played the game. All I knew was what the description stated and the trailer they had released. Let me tell you, this show pummeled me. I went through a roller-coaster of emotions while watching. I had made a premier menu for HOTD as I am a huge fan of GOT and was so pumped to watch it. I may or may not create more menus around other shows.
I decided around episode 3 of TLOU to create a menu for the finale.
Let's get started.
Frank and Bill's Strawberry Salad
10 Oz. Spinach
1/2 Small Red Onion, thinly sliced
1 lb. Strawberries, hulled and quartered
3/4 Cup Feta, crumbled
3/4 Cup Pecans, toasted
dressing
1/4 Cup Balsamic Vinegar
3 Tbsp. Extra Virgin Olive Oil
1 1/2 Tbsp. Poppy Seeds
1 1/2 Tbsp. Honey
1/2 Tsp. Dijon Mustard
1/2 Tsp. Kosher Salt
1/8 Tsp. Black Pepper
In the bottom on a salad bowl, add in the balsamic vinegar, olive oil, poppy seeds, honey, Dijon mustard, salt, and pepper. Whisk until very well combined.
Add in the spinach, onion, feta, strawberries, and pecans, Toss until combined.
Serve and enjoy.
Ellie's & Joel's Grilled Skewers
1 1/2 Lbs. Steak Cubes
1 Tbsp. Olive Oil
1 Tbsp. Worcestershire Sauce
2 Tsp. Dijon Mustard
1 Tsp. Kosher Salt
1/2 Tsp. Black Pepper
1/2 Tsp. Onion Powder
1/2 Tsp. Garlic Powder
1 Tbsp. Rosemary Finely Chopped
1 Lemon, zested and juiced
In a bowl, combine the olive oil, Worcestershire sauce, Dijon mustard, salt, pepper, onion powder, garlic powder, rosemary, lemon zest and juice, mix until well combined. Toss the steak cubes until evenly coasted. Allow to marinate for a minimum of 4 hours.
Place cubes onto a skewer and grill on high for 3-4 minutes on each side or until cooked to your desired doneness.
Serve and enjoy.
