Grilled Chipotle Shrimp

 This is such a quick dinner idea. You can make it into tacos or toss them on top of a salad.

Let's get started.

Grilled Chipotle Shrimp
2 Lbs. Large Shrimp, peeled and deveined
2 Tbsp. Vegetable Oil
1 Chipotle Pepper in Adobo, finely chopped
2 Tbsp. of Adobo Sauce
1 Tsp. Dried Mexican Oregano
1 Tsp. Ground Cumin
1 Tbsp. Smoked Paprika 
3-4 Cloves of Garlic, minced
2 Limes, juiced
1 Tsp. Kosher Salt
1/2 Tsp. Freshly Ground Black Pepper

In a bowl, combine the chopped chipotle pepper, adobo sauce, oregano, cumin, smoked paprika, garlic, lime juice, oil, salt, and freshly ground black pepper. Mix until well combined and toss the shrimp in the marinade until fully covered.

Pre-heat a grill or grill pan, and lightly oil the grates.

Grill the shrimp 2-3 minutes on each side. 

Remove from the grill and enjoy.
