Cherry Pie

Cherry Pie
4 Cups Cherries, pitted
1 1/2 Cups Granulated Sugar
4 Tbsp. Cornstarch
1 Tsp. Vanilla Extract
Pinch of Kosher Salt
2 Tbsp. Butter
1 Tbsp. Raw Sugar, to sprinkle 
2 Store-bought Pie Crust
1 Tsp. Raw Sugar
Egg wash

In a small bowl combine the sugar, cornstarch, and a pinch of salt.

In a medium saucepan, add the cherries, and allow to cook for 5-6 minutes. Stir in the sugar, cornstarch, and vanilla extract. Continue to cook until thickened. Remove from the heat and allow to cool completely. 

Prepare a pie pan with a sheet of pie crust, add in the cooled filling. Top with the other pie crust, brush a little bit of egg was over top and sprinkle with raw sugar. 

Pre-heat oven to 375 degrees Fahrenheit.

Bake Pie for 50 minutes, remove from the oven and allow to cool completely.

Serve, top with vanilla ice cream, and enjoy.
