Super simple dinner idea.
Chicken Fajitas
4 Chicken Breast, cut into thin strips
1 Red Onion, thinly sliced
1 Red Bell Pepper, thinly sliced
1 Green Bell Pepper, thinly sliced
4-6 Cloves of Garlic, minced
2 Tsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
1 Tbsp. Smoked Paprika
2 Tsp. Ground Cumin
1 Tsp. Chili Powder
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1 Tbsp. Dried Oregano
1 Cup Cilantro, roughly chopped
1-2 Tbsp. Vegetable Oil
Serve with: tortillas, avocado, and limes.
In a small bowl add in the salt, pepper, smoked paprika, cumin, chili powder, garlic powder, onion powder, and dried oregano; mix until well combined.
Heat a large skillet over medium high heat. Allow to heat up for 3-5 minutes. Add in the oil, chicken, and all of the seasonings. Sauté for 5-6 minutes making sure to stir often.
Then add in the onion, peppers, cilantro, and garlic. Stir and cook for an additional 8-10 minutes or until the chicken is fully cooked through.
Heat up your tortillas on a skillet, add in the fajitas, then top with avocado, and a squeeze of lime juice.
Serve and enjoy.
