Pork Loin Roast with Apples

 This pork roast is perfect for a small holiday gathering. 


Pork Loin Roast with Apples
3-4 lb. Pork Loin
2 Tsp. Garlic Powder
2 Tsp. Onion Powder
2 Tsp. Italian Seasoning
1 Tbsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
1 Tbsp. Olive Oil
2 Tbsp. Unsalted Butter
3 Apples, cut into 1/4-inch slices
1 Red Onion, cut into 1 inch chunks
4-6 Cloves of Garlic, minced
1/2 Cup Low Sodium Chicken Stock
1/2 Cup Apple Juice
1 Tbsp. Dijon Mustard
1 Tbsp. Apple Cider Vinegar 
1 Tbsp. Fresh Thyme
1 Tbsp. Fresh Rosemary

Pre-heat your oven to 375 degrees Fahrenheit.

In a small bowl combine the garlic powder, onion powder, Italian seasoning, salt, and pepper.

Pat the pork loin dry and season on all sides with the seasoning mixture.

In a skillet add in the olive oil and sear the pork on all sides. Once seared move the pork onto a roasting pan.

Using the same skillet add in the butter, garlic, thyme, rosemary, apples, onions, a pinch of salt and pepper. Sauté for 3 minutes then transfer into the pan. Placing them around the pork.

Deglaze the pan with the chicken stock, Dijon mustard, and apple juice. Making sure to scrape all of the brown bits at the bottom of the pan. Cook for 5 minutes or so until slightly reduced.

Remove from the heat and stir in the apple cider vinegar. Pour the juices over the pork and apples. 

Bake for 45-60 minutes or until the center of the pork reaches 145 degrees Fahrenheit. 

Let the pork rest for 10 minutes, then slice and serve alongside the apples, onions, and sauce from the pan.
