Gingerbread Pumpkin Waffles

Pumpkin, gingerbread, waffles, what's not to like.  

Let's get started.

Gingerbread Pumpkin Waffles
3 Cups All Purpose Flour
4 Tsp. Baking Powder
2 Tsp. Cinnamon
2 Tsp. Ginger
1/2 Tsp. Nutmeg
1/2 Tsp. Salt
4 Eggs
2/3 Cup Brown Sugar
1 Cup Pure Pumpkin Puree
1 1/4 Cups Milk
1/2 Cup Molasses
1 Tsp. Vanilla Extract
1 Stick Butter, melted

Top with: maple syrup, whipped cream, or whatever you fancy. 

In a large mixing bowl, add the eggs and brown sugar. Using an electric whisk, mix together until well combined (about 2-3 minutes)

Add in the pumpkin, molasses, milk, vanilla extract, and melted butter, and whisk until well combined. 

Sift in the flour, baking powder, cinnamon, ginger, nutmeg, salt and stir into the wet ingredients until just combined. 

Pre-heat your waffle iron and spray with non stick spray. Pour the batter into your hot waffle iron and cook according to the manufactures instructions.

Serve and enjoy.
