A great side for any meal.
Let's get started.
Sweet Potato Stacks
6 Medium Sweet Potatoes, cut into 1/8-inch slices
1 Stick Butter, melted
4-6 Cloves of Garlic, grated
2 Tbsp. Fresh Thyme
2 Tsp. Fresh Oregano
1/2 Gup Parmesan Cheese, Grated
1/4 Cup Manchego Cheese, Grated
Salt
Freshly Ground Black Pepper
Pre-heat your oven to 375 degrees F.
In a large bowl, toss together the sweet potatoes with the butter, garlic, thyme, oregano, parmesan cheese, Manchego cheese, a good pinch of salt and freshly ground black pepper.
Using a cupcake tray form stacks of sweet potatoes in each section.
Bake for 25-35 minutes until crispy. Remove from heat and allow to cool slightly.
Serve and enjoy.
