This is a great sandwich. You can leave out the turkey and it is still amazing. BTW this would be a great way to use up any leftover turkey from Thanksgiving. 😉
Let's get started.
Harvest Sandwich
Sandwich Bread
Turkey or prosciutto
Butternut Squash, peeled and sliced into 1/8-inch slices
2 Portabella Mushrooms, sliced
1 Onion, sliced
Arugula
Herbed Goat Cheese
Cream Cheese
Olive Oil
Kosher Salt
Freshly Ground Black Pepper
Preheat your oven to 375 degrees Fahrenheit.
In a roasting pan, add the butternut squash drizzle with olive oil and season with salt and pepper.
On a separate roasting pan add the mushrooms and onion drizzle with olive oil and season with salt and pepper.
Add both to the oven and roast for 20 minutes. Then flip both pans and continue to roast for an additional 20 minutes. Remove them from the oven and allow to cool completely.
Toast your sandwich bread.
Spread some cream cheese on one side of the bread and the herbed goat cheese on the other side.
Layer the turkey, butternut squash, mushrooms, onion, and arugula onto the rolls.
Serve and enjoy.
