Cranberry Orange Muffins

This is a family favorite.

Cranberry Orange Muffins
2 Eggs
1/2 Cup Vegetable Oil
1/2 Cup Milk
1 Orange, zested
1/2 Cup Fresh Orange Juice
3/4 Cup Granulated Sugar
3/4 Cup Brown Sugar
2 1/2 Cups All Purpose Flour
2 Tsp. Baking Powder
1 Tsp. Kosher Salt
1 Tsp. Vanilla Extract
1 1/2 Cups Cranberries, plus more for topping
2 Tbsp. Coarse Sugar

Pre-heat your oven to 350 degrees Fahrenheit. Line your muffin tin with liners.

In a medium bowl, add in the eggs, oil, milk, orange zest, juice, and vanilla extract until well combined. Add in the granulated sugar, and brown sugar and mix until fully incorporated.

In a large bowl, combine the flour, baking powder, salt, and make a well in the center.

Add the wet ingredients into the dry and stir until just combined. Batter will be thick, fold in the cranberries.

Scoop the batter into the prepared muffin tin. Top with additional cranberries and a sprinkle of coarse sugar.

Bake for 20-25 minutes or until fully cooked through. Remove from the oven and allow them to cool slightly.

Serve and enjoy.
