Soup season is here. This is a super simple soup to make, it really comes together in 30 minutes.
Let's get started.
Tortellini Soup
1 lb. Ground Italian Sausage
1 Onion, chopped
4-6 Cloves of Garlic, minced
1 Zucchini, diced into 1-inch pieces
1 Quart Chicken Stock
14 Oz. Crushed Tomatoes
2 Tbsp. Tomato Paste
1 Bunch Kale Leaves, roughly chopped
1 Cup Heavy Cream
1 Tbsp. Chicken Bouillon Powder
1 10oz. Bag of Tortellini, thawed
Pinch of Red Pepper Flakes
Parmesan Cheese, grated for serving
In a pot, add in the Italian sausage, onion, garlic, a pinch of red pepper flakes and sauté until fully cooked through.
Add in the chicken stock, crushed tomatoes, tomato paste, zucchini, chicken bouillon powder, and mix until incorporated.
Bring to a boil and allow to simmer for 15 minutes, then add in the kale, tortellini, heavy cream, and cook for an additional 5 minutes.
Taste and add additional salt and pepper if needed.
Serve and top with parmesan cheese and red pepper flakes.
