Apple Butter Waffles

Fall is here and as I always make apple butter here is a great way to use it. You can use store bought apple butter as well. 

Let's get started. 

Apple Butter Waffles
1/2 Cup Apple Butter
2 Cups All Purpose Flour
1/2 Cup Brown Sugar
4 Tsp. Baking Powder
1 1/2 Cups Milk
1 Tsp. Vanilla Extract
2 Eggs
2 Tbsp. Vegetable Oil
1 Tsp. Cinnamon
1 Tsp. Kosher Salt

In a large bowl, add the apple butter, brown sugar, milk, eggs, vegetable oil, and vanilla extract. Mix until well combined.

Sift in the flour, baking powder, salt, and cinnamon. Mix until just incorporated.

Heat up your waffle iron and spray with nonstick spray. Pour the batter into your hot waffle iron and cook according to the manufacturer's instructions.

Serve alongside with butter, maple syrup, powdered sugar, or any of your favorite toppings.

Apple Topping
3 Apples, Chopped
3 Tbsp. Butter
1/2 Lemon, zested and juiced
4 Tbsp. Brown Sugar
1 Tsp. Cinnamon
1/4 Tsp. Nutmeg
1/2 Tsp. Ginger
1 Tsp. Vanilla Extract

Add the butter and apples into a pan and sauté for 4-5 minutes. Add in the lemon zest, juice, brown sugar, cinnamon, nutmeg, vanilla extract and ginger. 

Cook for an additional 2-3 minutes until slightly thickened. 

Remove from heat, serve and enjoy.
