These came together in a breeze. Feel free to use frozen or fresh blueberries. I had a mix of frozen blueberries and raspberries and let me tell you they came out fantastic.

Blueberry Cottage Pancakes Printable Recipe
2 Cups All Purpose Flour
3 Tbsp. Granulated Sugar
1 1/2 Tsp. Baking Soda
3/4 Tsp. Baking Powder
1 Tsp. Kosher Salt
2 Eggs
1 1/2 Cups Milk
1 Cup Cottage Cheese
2 Tsp. Vanilla Extract
2 Cups Blueberries
Maple Syrup for topping
Butter for cooking
In a large bowl, add in the flour, sugar, baking soda, baking powder, salt, and whisk until well combined.
In a separate bowl, add in the eggs, milk, cottage cheese, vanilla extract, and mix until well combined.
Add the wet ingredients into the dry ingredients and stir until just combined. Fold in the berries.
Pre-heat a pan or griddle, add some butter, pour batter by 1/3 cupsful into prepared pan. Cook for about 3 min or until small bubbles form on top of the pancakes. Flip and cook for an additional 2-3 minutes. Repeat with remaining batter.
Serve topped with maple syrup and enjoy.
