Banana Coffee Cake

Coffee Cake to use up any bananas you may have sitting around.

Banana Coffee Cake Printable Recipe
2 Cups All Purpose Flour
2 Tsp. Baking Powder
1 Tsp. Baking Soda
1 Tsp. Cinnamon
1 Tsp. Salt
1/2 Cup Unsalted Butter, softened
3 Ripe Bananas, peeled and mashed
1/2 Cup Granulated Sugar
1/2 Cup Brown Sugar 
2 Large Eggs
2 Tsp. Vanilla Extract
1 Cup Milk

Crumb Layer
1/2 Cup Cold Unsalted Butter, cut into cubes
1 Cup All Purpose Flour
1 Cup Packed Brown Sugar
1/2 Cup Granulated Sugar
1 Tsp. Cinnamon

Glaze
1 Cup Powdered Sugar
1-2 Tbsp. Milk

Preheat your oven to 350 degrees Fahrenheit. Grease a 9 x 13-inch baking pan.

In a large bowl, add in all of the crumb topping ingredients and using your hand or two forks mash together until the mixture resembles crumbs. Set aside.

In a separate large bowl, add in the flour, baking powder, baking soda, cinnamon, salt, and whisk until well combined. Set aside.

In a separate large bowl, add in the butter, brown sugar, granulated sugar, and using an electric mixer, mix until well combined about 2-3 minutes. After butter is creamy add in the eggs, vanilla extract, and mashed bananas, mix until combined.

Add in the milk and whisk until well combined, Stir in the flour, making sure not to over mix.

Pour batter into the prepared baking pan top with the crumb topping.

Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and allow to cool for 15 minutes. 

Combine the glaze mixture and drizzle over the top of the coffee cake.
