Grilled Chicken Salad

This is a super easy dinner to make. Perfect for Memorial Day as it is healthy, and it is easy to double the recipe. Make a quick appetizer and dessert and you have a simple menu.

Grilled Chicken Salad
1/4 Cup Olive Oil
1/4 Cup Fresh Lime Juice
1 Tbsp. Cumin
1 Tsp. Garlic Powder
1 Tsp. Onion Powder
1 Tsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
4 Chicken Breast, cut in half horizontally 

Salad
2 Avocados, sliced
Cherry tomatoes, sliced 
1 Bell Pepper, sliced
1/2 Red onion, thinly sliced
Mixed Greens
Feta

Vinaigrette
2 Tbsp. Shallot
2 Cups Cilantro
1-2 Cloves of Garlic
1/2 Tsp. Red Pepper Flaker
1/2 Cup Olive Oil
2 Tbsp. Red Wine Vinegar
1 Tsp. Salt
1/2 Tsp. Freshly Ground Black Pepper

Combine the marinade for the chicken and let marinade to a minimum on one hour.

Preheat your grill or grill pan and grill the chicken for 4-5 minutes on each side or until fully cooked through.

In a food processor, add all of the ingredients for the vinaigrette and blend until well combined. Set aside until ready to use.

In a bowl, toss your mixed greens with a little bit of the vinaigrette. Top with the tomatoes, avocado, onion, bell pepper and a little bit of feta cheese. 

Top your salad with cut up chicken pieces and enjoy. Serve the extra vinaigrette on the side.
