Spiced Citrus Salmon

 This is a great and easy dinner idea. Perfect for those of you who are participating in Lent. I like to serve mine along some rice or a salad.

Let's get started.

Spiced Citrus Salmon Printable Recipe
One 1-1.5 lb. Salmon Fillet, Skin on
1/2 Tsp. Ground Cumin
1/2 Tsp. Ground Ginger
1/4 Tsp. Ground Cinnamon
1/4 Tsp. Ground Coriander
1/2 Tsp. Cayenne Pepper
1/8 Tsp. Ground Cloves
1 Blood Orange, thinly sliced 
1 Lemon, thinly sliced
1 Lime, zested and juiced
1 Bunch of Fresh Thyme
1 Tbsp. Olive Oil 
Kosher Salt 
Freshly Ground Black Pepper

Pre-heat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or aluminum foil.

Place the thinly sliced oranges, lemons, and thyme in the center or the prepared baking sheet, roughly in the shape of the salmon fillet, sprinkle with salt and pepper. Set aside. 

In a small bowl, combine the olive oil, lime juice, lime zest, cumin, ginger, cinnamon, coriander, cayenne pepper, cloves, salt, and a pepper.

Place the salmon skin side down on the prepared baking sheet. Top with spice mixture making sure to evenly coat it. 

Roast for 12-15 minutes, remove once done and cut into portions.

Serve and enjoy.
