Cheesecake Cookie Bars

Delicious and easy to sub any color m&m's to make them match whatever holiday you wish. I used green and white to make them for St. Patrick's Day.

Cheesecake Cookie Bars Printable Recipe

Cookie Layer
1 Cup Unsalted Butter, Softened
1/2 Cup Brown Sugar
1 1/2 Cup Granulated Sugar
2 Eggs
1 Tbsp. Vanilla Extract
2 1/2 Cups All Purpose Flour
1 Tsp. Kosher Salt
1 Tsp. Baking Soda
1 Tsp. Baking Powder
1 Cup. Chocolate Chips

Cheesecake Layer
8 oz. Cream Cheese, room temp.
1/2 Cup Granulated Sugar
1 Egg
1 Tsp. Vanilla Extract

Topping: 1/4 Cup M&M's

In a large bowl using an electric mixter, add in the butter and both sugars. Mix together for 3 minutes. 

Add in the vanilla and eggs, and mix until well incorporated. Add in the flour, salt, baking soda, baking powder, and mix until well combined. Mix in the chocolate chips. Chill dough while you make the cheescake layer.

Pre-heat your oven to 350 degrees Fahenheit. Line a 9x13inch baking pan with parchment paper and spray with nonstick spray

In a seperate large bowl, add in the cream cheese, sugar, egg, and mix with an electric mixer for 3 minutes. Set aside. 

Press 1/2 of the cookie dough on the bottom of your prepared pan to make an even layer. Spread the cheesecake mixture over the cookie dough.

Crumble the remaining cookie dough over the cheesecake mixture and sprinkle with m&ms.

Bake for 40-45 minutes. Remove from the oven and allow to cool in the pan for 30 minutes. Then place them in the refrigerator for at least 2 hours.

Remove from pan and cut into even pieces.
