Brown Sugar Blueberry Cookies

Stumbled across dried blueberries and have been pretty much putting them in everything. 😅 This recipe makes about 24 cookies. I usually make a dozen at a time and freeze the remaining uncooked batter for when I'm craving fresh cookies. 

Let's get started.

Brown Sugar Blueberry Cookies Printable Recipe
2 Cups All Purpose Flour
1 Tsp. Baking Soda
3/4 Tsp. Cinnamon
1 Tsp. Kosher Salt
3/4 Cup Unsalted Butter, Softened
1 1/4 Cups Brown Sugar
1 Egg
2 Tsp. Vanilla Extract
1 Cup Dried Blueberries

Pre-heat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.

In a medium bowl, whisk together the flour, baking soda, cinnamon and salt; set aside.

In a separate large bowl, add in the butter and brown sugar. Using an electric mixer, whisk together until well combined about 2-3 minutes.

Add in the egg and vanilla extract and mix until combined. Add in the flour and mix until combined. Add in the blueberries and gently fold them in.

Using a cookie scoop, drop the cookies onto the prepared baking sheet two inches apart. Bake the cookies for 11-13 minutes.

Remove from the oven and allow them to cool on the baking sheet then transfer to a wire rack.

Serve and enjoy.
