Another delicious way to use up that fresh summer fruit in this last bit of summer.
Let's get started
Almond Shortcake
1 Cup All Purpose Flour
1 1/2 Cup Almond Meal
1 Tbsp. baking powder
1/2 Tsp. Salt
2/3 Cup Milk
1 Egg
1/3 Cup Vegetable Oil
1 Tbsp. Sugar
In a bowl combine the flour, almond meal, baking powder, and salt. Add in the milk, egg, vegetable oil and stir to combine.
Drop scoops of dough on a oiled baking sheet, sprinkle with sugar and bake for 10-12 minutes.
Split shortcakes and fill with whipped cream, your choice of berries or peaches, plumbs, nectarines. Whatever you have on hand.
