Portuguese BBQ

#BBQaroundtheworld is taking me to Portugal today. While these may not be super authentic they are very delicious. They go great with wine if I do say so myself. 😉

Let's get started.

Portuguese BBQ Chicken Printable Recipe
1 Whole Chicken, butterflied
1 Tbsp. Smoked Paprika
1 Tbsp. Chili Powder
1 Tbsp. Regular Paprika
1 Tbsp. Italian Seasoning
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
1 Tbsp. Brown Sugar
4 Tbsp. Franks Red Hot Sauce
4 Tbsp. Olive Oil
1 Lemon, zested and Juiced
2 Tsp. Salt
2 Tsp. Freshly Ground Black Pepper

In a glass container that is big enough to fit the whole butterflied chicken, add in all of the marinade ingredients and mix to combine.

Add in the chicken, making sure to massage the marinade into the chicken; cover and let marinade for a minimum of 4 hours or overnight.

Preheat your oven or grill to 400 degrees Fahrenheit. Remove your chicken from the refrigerator 30 minutes prior to grilling or placing in the oven.

Bake/Grill for 45 minutes or until the internal temperature reaches 165 degrees Fahrenheit.

Remove and let rest.

Carve, serve and enjoy.

Espetadas (Portuguese Beef Kabobs) Printable Recipe
3/4 Cup Red Wine
8-10 Cloves of Garlic, minced
8 Bay Leaves, Crumbled
1 Tbsp. Kosher Salt
2 Tsp. Freshly Ground Black Pepper
3 lbs. Steak, Cubed
Bamboo Skewers, soaked

In a resealable bag, add in the red wine, garlic, bay leaves, salt, pepper, and cubed steak. Mix making sure it is evenly coated. Let it marinade for a minimum of 4 hours or overnight.

Preheat your grill or grill pan.

Place the cubed beef on your skewers, discard remaining marinade and grill your skewers 2-3 minutes on each side.

Remove from grill, serve and enjoy.

While these potatoes are in no way traditional, they are super delicious. I had made them along side the chicken and beef and had no complaints.

Roast Potatoes Printable Recipe
3 lbs. Yukon Gold Potatoes, Thinly Sliced
1 Onion, Thinly Sliced
4-6 Cloves of Garlic
1 Tbsp. Olive Oil
1 1/2 Tsp. Kosher Salt
1 Tsp. Freshly Ground Black Pepper
4 Sprigs Thyme
2 Tbsp. Butter, Melted

Pre-heat the oven to 375 degrees Fahrenheit.

In a baking pan toss together the potatoes, onion, garlic, olive oil, thyme, butter, salt, and pepper.

Bake for 40-45 minutes or until a fork easily pierces the potatoes. Taste and adjust seasoning if needed.

Remove from heat, serve and enjoy.
